THE SHOW MUST GO ON
We used to joke about writing “The Worst Case Scenario Handbook” for catering.
It goes something like this:
- Plan for the flat tire with the van full of food
- Plan for the wedding cake to fall out of the van or get eaten by the bride’s dog
- Plan for extra staff in case a cook or server has a family emergency
- Pack the emergency kits with: altoids, wine-away, tape, lighters, deodorant, markers, bandaids, plastic wrap, mini-cutting board, knife, tampons, gloves, bags, aspirin, Tylenol, flashlight, bow tie, mini dust broom & pan, black tie, safety pins, cards, hand soap, sanitizer, dish soap, birthday candles, emergency phone lists…
- Plan for the runner, who’s ready to run, to-or-from the shop
- Pack out the buckets, bags, wrap, boards, knifes, pans, water, side towels, table protectors, utensils, carts, wheels, racks, strainers, anything too big to fit into the emergency kit and the kitchen sink
- Plan for no power or light in a dish-up tent.
- Plan for no power or light, indoors, either
- Plan for no heat
- Plan for too much heat
- Plan for drunk relatives
- Plan for the plan to change mid-event
- Plan for the speech to go on forever, in turn, triggering the how-not-to-overcook-the food-plan
- Plan for ice cream that’s rock hard from dry ice or melted, cuz..damn, not enough dry ice
- Plan for dancing on the tables
- Plan for catching the youngsters who snuck into the “spiked” punch
- Plan for loosing the van keys in the grass in the dark
- Plan for the oven not to work
- Plan for surprise guests, or no guests, thus triggering the food-donation plan
- Plan for the client’s animals freely helping chefs in the kitchen
- Plan to work with no shoes inside, plan to be seen and not heard or plan to be asked to be a part of entertaining the party
- Plan for allergies
- Plan for bees
- Make a rain-plan in Seattle, well, Duh!
OK… that’s just Chapter One

- Plan for individually portioned cocktails, wine, beer, water, sodas, juices, shrub or any other beverages of choice, individually bottled.
- Plan for individual CUSTOM Gala, Birthday, Shower, Couples or Wine-Tasting Boxes
- Plan for individual CUSTOM BBQ, Glamping or Picnic Kits
- Plan for Fire-it-yourself dinners with cooking instructions for deliveries
- Plan for Drive-By Meals for Zoom Parties
- Plan for Kids Pizza & Cookie-Decorating Kits (Custom Kids Chef’s Camp Kit)
- Plan for Bartending Cocktail Kits
- Plan for We-Wedding Cakes and Tasting boxes
- Plan for “U can’t touch this!” to be played by the DJ at your next party (OK, just seeing if you’re still reading )
